Wild Turkey Breast with Pineapple Habanero Sauce


Ingredients:
2-3 lbs. Turkey breast, cut into strips
4 T. flour
1/2 tsp. onion salt
1/2 tsp. pepper
2 tsp. paprika
1 tsp. sage
2 T. cooking oil
1/2 cup Better Than Average Pineapple Habanero Jelly
8 Oz. Fresh mushrooms, sliced
1 bunch chives, chopped

Directions:
Combine flour, salt, pepper, paprika and sage in a small paper or plastic bag. Add turkey breast strips and shake to coat. In a frying pan, brown turkey in hot oil. Add jelly, mushrooms and chive. Cover and simmer until tender, about 45-50 minutes. Oh Yummy!


Venison Stew


Ingredients:

3 lbs. boneless venison cubed

Flour
2 large onions, chopped

2 large carrots, chopped

4 large Potatoes, Chopped

1/2 jar Better Than Average Jalapeno Jelly
2 large garlic cloves, finely chopped
Salt and pepper
3 tbsp. bacon fat
2 cups beef stock

Cut meat into 1 1/4" cubes. Dust with flour, salt, and pepper. Brown meat on all sides in bacon fat over medium heat; add onions and remaining ingredients. Cover; simmer approximately 1 1/2 hrs. or until tender.

Wild Game Recipes

Lobster Pot Pie



Ingredients

½ cup onions, chopped
3 teaspoons Better Than Average Garlic Jelly
½ pound mushrooms, (shiitake, cremini, and white)
6 each plum tomatoes, chopped
1 cup green peas
1 cup baby carrots, parboiled
2 cups lobster or fish stock
5 cups heavy cream
4 cups cooked lobster meat
¼ cup tarragon, chopped
1½ pounds puff pastry

In a large, deep pan, sauté onions and garlic Jelly until translucent. Add mushrooms and sauté slightly. Stir in tomatoes, peas, carrots, and stock. Reduce slightly and add cream, lobster, and tarragon. Season mixture and pour into 8, 6-in. soufflé dishes. Cover with puff pastry and bake until golden brown.
